Barbecue is a Texas tradition, and Heim started with a $300 smoker and a whole lot of passion for perfecting the art of smoking meat. Most folks go for the brisket with a salt-and-pepper crust. A two- or three-meat tray with classic Texas barbecue sides will give you a little taste of everything Heim can do — potato salad is a classic that goes great with anything.
